Fresh pizza dough

How do you use the deli's fresh pizza dough?  Is one bag meant to be enough for two crusts, or one, and of what size?  What's your baking method?   What else do you do with the dough...rolls, big pretzels?   Would like to get some new ideas!  The deli's pizza sauce is excellent, as is.

I don't use the dough that much because my family is gluten free, but I wanted to say that I really like letting the dough fall out of the bag and find it amazing that no dough gets left in the bag!
