Another wonderful way to enjoy beets! Makes a dish that is pleasing to the eye and the palate.
|8 oz||angel hair pasta|
|2 T||olive oil|
|1⁄2||red onion (minced)|
|salt (to taste)|
|black pepper (to taste)|
|1⁄2 c||broth (or water)|
|crushed red pepper flakes (to taste)|
|parmesan cheese (to taste, optional)|
Finely dice the beets and sauté in oil with salt and pepper until just tender. Add garlic and onion next, cooking for an additional minute. Next, add the broth/water, followed by the rosemary and pepper flakes. When heated and beets softened to a pleasing consistency, spoon over cooked pasta and serve with lots of freshly grated Parmesan cheese- yum!
