Definitely dessert, but a healthful choice. Wholesome oatmeal, whole-wheat flour and a medley of dried berries will satisfy your sweet tooth.
|1 c||whole wheat flour|
|3⁄4 t||baking soda|
|3⁄4 t||baking powder|
|1⁄4 t||sea salt|
|8 T||butter (chilled)|
|3⁄4 c||nonfat milk (or soymilk)|
|1⁄4 c||evaporated cane juice crystals (or turbinado sugar)|
|1 c||dried berries (cranberries, blueberries, cherries and raisins)|
|1 c||all-purpose white flour|
Preheat the oven to 375ºF. In a medium bowl, combine all the dry ingredients. Then, cut the chilled butter into the dry ingredients until the mixture is crumbly. Add the dried berries and milk, mixing until the dough forms a ball. On a lightly floured surface, pat the dough into a circle about 1 1/2” thick. Cut the dough into 8 wedges. If desired, sprinkle the tops of the scones with extra cane juice crystals or sugar. Bake in the oven for about 25 minutes, or until lightly brown. Enjoy!
Could easily be made into a vegan recipe by substituting margarine for the butter and soymilk for the nonfat milk.
