Description

Try this with corn bread and cold melon on a hot day.

Ingredients

4 ccooked black-eyed peas, drained
1 rib celery, minced
1 carrot, diced
1 small red onion, diced
1 red bell pepper, diced
1⁄2 bnfresh spinach, sliced in ribbons
1⁄2 bnparsley, chopped small
2 Ttoasted sesame oil
1 cbalsamic vinegar
2 Tolive oil
1 tsalt
1 tblack pepper, or to taste
1 Tbasil

Instructions

Combine dressing ingredients and mix well. In separate large bowl, combine remaining ingredients. Add dressing and mix well.
