Blue Cheese and Walnut Linguini

Serve this tangy dish as a side or main course.


1 lblinguini, cooked and drained
2 medium yellow onions, sliced in half moons
1 colive oil
1⁄2 cparsley, minced
3⁄4 cblue cheese, crumbled
2⁄3 cwalnuts, toasted
1 cbalsamic vinegar
1 tsalt
1 tblack pepper, or to taste


Heat oil in sauté pan and add onions. Caramelize the onions and add balsamic vinegar. Let boil for 3 minutes to reduce juice. Add onions and liquid to cooked pasta and cool. When fully cooled add parsley, salt, pepper, blue cheese, and toasted walnuts. Mix and serve.
