Description

This is not your mother's meatloaf recipe!

Ingredients

1 onion (minced)
4 clvgarlic (minced)
1 green pepper (minced)
6 scallions (minced)
2 celery rib (minced)
4 Tbutter
1⁄2 ccatsup
2 Thot sauce
1 tsalt
1⁄2 tblack pepper
4 bay leaves
1⁄2 tcayenne pepper
2 tground cumin
1⁄2 tnutmeg
1 lbground turkey (or pork)
1 lbground beef
2 eggs
2 cbreadcrumbs

Instructions

In a large skillet over medium heat, sauté onion, garlic, green pepper, scallions, and celery in the butter until the veggies begin to stick. Add catsup, hot sauce, salt, pepper, bay leaves, cayenne, cumin, and nutmeg and cook for about 2 minutes. Remove bay leaves. In a large bowl, combine turkey (or pork), beef, eggs, and breadcrumbs. Add sautéed vegetables and mix well. Shape into loaf and place on rimmed baking sheet, or pack into a large loaf pan. Bake uncovered at 350º for 45-60 minutes.
