Cajun Meat Loaf

Description

This is not your mother's meatloaf recipe!

Ingredients

4 bay leaves
1 tsalt
1⁄2 tcayenne pepper
1⁄2 tblack pepper
2 tground cumin
1⁄2 tnutmeg
4 Tbutter
1 green pepper, roughly chopped
6 scallions, chopped
1 yellow onion, chopped
4 clvgarlic
2 stalks celery
2 Thot sauce
1⁄2 ccatsup
1 lbground beef
1 lbground turkey or pork
2 eggs
2 cbreadcrumbs

Instructions

Place onion, garlic, green pepper, scallions, and celery in food processor and pulse until they are finely minced, but do not liquefy. Sauté this mixture in the butter until the veggies begin to stick. Add catsup, spices, and hot sauce and cook for about 2 minutes. Remove bay leaves. In a large bowl, combine turkey (or pork), beef, eggs, and breadcrumbs. Add veggies and mix well. Shape into loaf and place on rimmed baking pan or pack into a large loaf pan. Bake uncovered at 350º for 45-60 minutes.
