|1 3⁄4 lb||sweet potatoes (peeled, cut into 1/2-inch chunks)|
|1 1⁄2 T||coconut oil (virgin, melted)|
|2 t||light brown sugar|
|1⁄4 t||black pepper|
|1⁄4 t||nutmeg (grated)|
Preheat the oven to 350˚F.
Place the sweet potatoes in a large mixing bowl. Add the melted coconut oil, brown sugar, salt, pepper, and nutmeg, and stir to coat. Transfer the sweet potatoes onto a baking sheet in an even layer.
Roast, tossing occasionally, until tender and caramelized, about 1 hour. Serve hot.
