A yummy cold chicken salad that is just the thing for a healthy and hearty lunchtime fix.
|2 c||cooked quinoa, chilled|
|1||small head radicchio, chopped|
|1 c||cooked chicken, cut in bite sized pieces|
|1⁄2 c||feta cheese, cubed|
|1||small red onion, chopped fine|
|2 T||pine nuts or walnuts|
|1⁄4 c||chopped fresh parsley|
|olive oil and vinegar dressing, to serve|
Toss cooked quinoa, chopped radicchio, cooked chicken, cubed feta cheese, chopped red onion, pine nuts and parsley together until all ingredients are well distributed.
Dress the salad with olive oil and red wine vinegar.
