It doesn't get any easier than this!
|4||carrots (scrubbed or peeled, cut into 1/4-inch rounds)|
|2 t||curry powder|
Place the carrots in a saucepan and cover with 1/2 cup of water. Bring to a boil, then lower the heat to a simmer. Stir in the curry powder, butter, honey, and a good pinch of salt. Cover and simmer for 10-12 minutes, until tender. Serve.
