Curried Chickpeas

This spicy side dish can be served hot or cool.


4 ccooked chickpeas, well drained
1 ccanola oil
1 tcrushed red peppers, or to taste
4 clvgarlic, minced
1 Tcumin
1 tturmeric
1 tcoriander
1 tcardamom
1⁄2 tcayenne pepper, or to taste
4 scallions, thinly sliced
1⁄2 lbspinach, rinsed and chopped
2 tomatoes, diced
1 Tlime juice
1⁄2 tblack pepper
1⁄2 tsalt


Sauté garlic and red pepper in oil; add spices and continue to sauté until golden brown. Add tomatoes, spinach, and scallions to chickpeas. Add sautéed items to chickpeas and mix well. Add limejuice, salt, and black pepper and mix.


For a milder dish, reduce spices to taste.
