Curry Noodle Stir Fry

Description

A warm, satisfying noodle dish.

Ingredients

1⁄2 lbsoba noodles, cooked
1 small onion, diced
2 clvgarlic, minced
1 each red and green bell pepper, chopped
3 cbroccoli or cauliflower, chopped and steamed
1 cfrozen peas
1 Tolive oil
1 tturmeric
1 tbrown mustard seed
1⁄2 twhole cumin seeds
1 tarrowroot
1⁄2 ccilantro, chopped
1⁄4 cwater
  tamari to taste
  limejuice to taste

Instructions

Sauté onions in olive oil until translucent. Add garlic, broccoli and peppers and cook until slightly softened. Add water, turmeric, mustard, cumin, and arrowroot. Bring to a boil, stirring frequently. When mixture thickens, remove from heat. Pour over noodles and mix well. Add cilantro and peas. Adjust for salt and acid with tamari (start with 1 tablespoon) and limejuice (start with ½-tablespoon).
