Quick and easy chili!
|3 T||chili powder|
|1⁄4 c||roasted tomato salsa|
|1 c||onions (chopped)|
|1⁄2 c||green pepper (diced)|
|2 T||garlic (minced)|
|1 cn||tomato juice (15oz)|
|1 cn||diced tomatoes (15oz, undrained)|
|2 cn||chili beans (15 oz)|
|1 cn||kidney beans (15oz, undrained)|
In a large saucepan, heat 2 tablespoons of vegetable oil and saute the onions and green peppers for 5 minutes. Add the garlic and chili powder and saute 2 minutes more. Add the juice, tomatoes, chili and kidney beans. Bring to a boil, then simmer 30 minutes, stirring often. Add salsa and simmer 10 minutes more.
For thicker chili, make one day in advance and refrigerate until needed.
