Cooked entirely on the stovetop, these chewy cookies are a nice, easy treat. These are very easy to make vegan, too (see note)!
|2 c||granulated sugar|
|8 T||butter (unsalted, see note)|
|1⁄2 c||cocoa powder|
|1⁄2 c||milk (see note)|
|1 t||vanilla extract|
|3 c||oats (quick-cooking )|
|1 c||walnuts (finely chopped)|
Line a baking sheet with waxed paper. Set aside.
Combine the sugar, butter, cocoa powder, and milk in a large saucepan. Bring to a boil over medium-high heat, and cook, stirring, for 2 minutes, until the butter is melted and the sugar is dissolved. Remove from heat, and fold in the vanilla extract, oats, and walnuts. Use a 1-ounce scoop or 2 tablespoons to drop cookies onto the prepared cookie sheet. Refrigerate for 10 minutes, until firm. Enjoy!
Make these vegan by using margarine or coconut oil instead of butter, and non-dairy milk instead of milk.
