Do you try to convince yourself to eat more salads but find yourself lacking inspiration? Perhaps you linger in the dressing aisle, searching for a compelling new flavor that will bring a new excitement to your greens. This simple, homemade dressing is just the trick! Papaya seeds are known for a subtle, peppery flavor. Combined with some oil, herbed vinegar and a hint of onion, you will find your palate singing new songs in the key of D. Yes, D stands for delicious!

1 csugar
1 1⁄2 tsalt
1 ctarragon vinegar
1 cvegetable oil
1⁄4 conion (minced)
1 papaya (halved, reserving 3 Tbsp of the seeds and reserving the fruit for another use )
1 Tmustard (dry, english-style)

In a blender or food processor blend the sugar, the salt, the mustard, and the vinegar until smooth. With the motor running add the oil in a stream and blend the dressing until it is emulsified. Add the onion and the reserved papaya seeds and blend the dressing until the papaya seeds are the consistency of ground pepper. The dressing keeps, covered and chilled, for 2 weeks. Makes about 3 cups.

Romaine or other crunchy greens lend themselves well to this salad adornment, both in terms of taste and texture.
