Serve this tasty noodle dish with baked tofu for a great meal.
|2 T||canola oil|
|2 T||seasame oil|
|1 T||ginger (fresh, grated)|
|4 oz||shiitake mushrooms (sliced)|
|1⁄2||head bok choy (chopped)|
|2 clv||garlic, minced|
|2 t||white wine vinegar|
|toasted sesame seeds (for garnish)|
|scallion (chopped, for garnish)|
Cook linguini in boiling water 8-10 minutes, stirring occasionally; drain and cool. Sauté ginger and shitakes in both oils for about 5 minutes. Add bok choy and sauté 5 minutes longer. Add garlic, tamari, vinegar and water and heat through. Combine noodles with sauce, and then add toasted sesame seeds and chopped scallion for garnish. Mix well.
