Smoky Guacamole

The secret ingredient in this guacamole is smoky and rich mole sauce. Just a little turns regular guacamole into something very special!


2 clvgarlic
1⁄2 tsalt
1 shallot (large, minced)
2 Tlime juice (fresh)
4 avocado (ripe, pitted)
2 tmole sauce (plus more, if you'd like)


Place the garlic on a cutting board and sprinkle with salt. Mince and smash the garlic, using the side of the knife to smash the salt and garlic into a paste. Place in a medium bowl. Add the minced shallot and lime juice, and stir to combine. Let sit for 5 minutes. Scoop out the avocados from their skins and add to the bowl. Lightly smash with a fork, more or less, depending on how chunky you like your guacamole. Add the mole sauce, and fold to incorporate. Taste, and adjust the seasoning as needed.
