Mom's tuna salad never tasted like this!
|2 T||olive oil|
|2 T||parsley (minced fresh, or chives)|
|2 T||basil (minced fresh)|
|1 t||garlic (minced)|
|4 cn||yellowfin tuna (6-oz each, drained well)|
|4||artichokes (canned whole, drained and roughly chopped)|
|1 c||red bell pepper (diced)|
|2 T||red onion (diced)|
|1⁄4 c||kalamata ( or other brine-cured black olives, pitted and chopped)|
|salt and pepper (to taste)|
In a mixing bowl, whisk together mayonnaise, olive oil, lemon
juice, parsley, basil and garlic. Add the drained tuna and chopped artichokes, red bell pepper, Kalamata or black olives and red onion. Mix everything together with clean hands or a spoon until well
blended. Add salt and pepper to taste.
Serve with roasted potatoes, green beans, olives and tomato
