Description

Mom's tuna salad never tasted like this!

Ingredients

1⁄2 cmayonnaise
2 Tolive oil
2 Tparsley (minced fresh, or chives)
2 Tbasil (minced fresh)
1 tgarlic (minced)
4 cnyellowfin tuna (6-oz each, drained well)
4 artichokes (canned whole, drained and roughly chopped)
1 cred bell pepper (diced)
2 Tred onion (diced)
1⁄4 ckalamata ( or other brine-cured black olives, pitted and chopped)
  salt and pepper (to taste)

Instructions

In a mixing bowl, whisk together mayonnaise, olive oil, lemon
juice, parsley, basil and garlic. Add the drained tuna and chopped artichokes, red bell pepper, Kalamata or black olives and red onion. Mix everything together with clean hands or a spoon until well
blended. Add salt and pepper to taste.

Notes

Serve with roasted potatoes, green beans, olives and tomato
wedges.
