Natural Step
Q: Thank you for the column by Mike Byrne in February’s issue that discussed the move of Middleton Sustainability Committee’s Green Thursday program to Willy West. Deb Shapiro mentioned it in her column in the March issue, too. Readers should know that this program is not only available at Willy West, but is part of a larger Green Tuesdays & Thursdays film and lecture series, started in 2008, that is now available in nine communities and neighborhoods in Dane County. vegan goodness
Q: Thanks for the new selection of vegan cupcakes and pies and cookies! I like that the Co-op is using local pasta, but why does the otherwise vegan Mexican Bean Orzo salad need to have orzo made with eggs?

SUGAR
Q: Is sugar necessary in meatloaf (in hot bar). Sorry, that’s ridiculous. There’s so many hot and salad items I can’t eat because of sugar in it. Don’t tell me how little sugar is used. Everyone knows it’s unhealthy, no matter how little is used.

A: We use 1 cup of brown sugar in 13 lbs. of product. We find that it gives the glaze used on top of the loaf a pleasing taste. We do have many items that do not contain any added sugar, however, and hope you will enjoy them. –Josh Perkins, Kitchen Manager

NO SECRET TO SAVINGS
Q: No Secret to Savings: Understanding the Bulk Aisle looks like a great class but unfortunately I couldn’t attend the January class. Please consider another class date in the near future. Thanks!

A: Good news! This is a pretty regular class that we try to offer every 4-6 weeks. We have upcoming classes at Willy West on Tuesday, March 27th, and at Willy East on Tuesday, March 13th and Thursday, April 12th. See the Community Room Calendars on pages 5–8 for more information. BULK COOKING INSTRUCTIONS
Q: It is too bad you no longer have cooking instructions on the bins in the bulk area. I don’t know how long to cook the rice I just bought.

IF YOU NEED SOMETHING, JUST ASK
Q: Please fix the bag supply problem. Small and medium size bags have been out so frequently since the new bulk containers have been installed. They’re often out at all four stations. Thanks.

A: I’m sorry about your inconvenience. As the bulk buyer I try to keep everything in stock. I cannot think of a time in the last three months that we were completely out of stock of any of the bags. I will work with the team to be sure the bags are well stocked. If what you need is not stocked, just ask and we will get it for you. –Jim Green, Bulk Buyer–East

EGG ISSUES
Q: Why don’t we have eggs with a Cornucopia rating of “5,” Wisconsin farmers have that rate, although we do not offer them.

A: As far as we’re aware, none of the “5” producers produce enough to keep our stores stocked. “4” is currently our highest, from New Century Farm. –Lynn Olson, Director of Cooperative Services

SCOOPS
Q: Big scoops in the spice containers create waste, the spices spill. There should be a way to return food to the bulk food area if too much spills into one’s bag, if not it’s just put there in the black plastic to waste.

A: 1.) Big scoops: this is the first complaint I have heard about the scoops. If I get more complaints, I will consider changing them. 2.) Returning product to jars/bins: Health code does not allow us to return any product to its jar/bin once it has been dispensed or spilled. –Jim Green, Bulk Buyer–East

DOUBLE RAVE
Q: This is a double rave!!! 1st, the glorious Pho as a soup choice and 2nd the deliciously spicy taco meat—both at the food bar this last few days. Encore! Encore!

A: We really appreciate our Owners’ input. Glad you had a good experience at our hot bar. The Pho soup was made here by one of our chefs, Lily Kilfoy. ORGANIC
Q: Please serve ORGANIC Earth Balance at deli. No excuse. Thanks.

A: We appreciate the suggestion. With the number of condiments we offer on the hot and cold bars, in order to keep costs in line we use the traditional Earth Balance, which is approximately 40¢ cheaper than the organic version. CUSTOMER COMPLIMENT
Q: Just want to compliment Willy on great interest and care toward the customer. Today I walked in—asked about Temple oranges, a person called thr supplier and asked about getting them special ordered. Asked another person asked about cake flour (in bulk)—although you don’t carry (wish you did), he told me how to substitute. Really remarkable service. I love this place.

Q: I just want to let you know how wonderful and kind the Willy Street Co-op staff is. My friend and I stop off at the Co-op every Tuesday morning for a cookie and snacks. Your cashiers have been kind enough to bring hot sauce to the eating area because it is difficult for me to go back to the deli with my friend. Thank you so much! P.S. Q: Thank you! For adding Zevia soda to your beverage case—an awesome option for people who avoid refined sugar but sometimes crave a soda. May I suggest adding their “Dr. Pepper” and/or “Mtn. Mist/Dew/whatever they call it” as those flavors are tasty AND caffeinated?! Thanks again.
