Avocado Ice Cream

Adapted from a recipe in My Sweet Mexico, by Fany Gerson.


“Most people have had avocado in a salty and/or spicy format, or at least as an accompaniment to something that is not primarily sweet. If you like avocado, however, you will really enjoy this ice cream. Its natural oil gives the ice cream a very smooth and silk mouth feel, and the lime juice heightens its flavor. Although it may taste too sweet before freezing in the ice cream maker, it will be just right when it’s done.” –Fany Gerson, author of My Sweet Mexico


3 hass avocados (ripe)
2 limes (juiced)
1 1⁄2 cwhole milk
1 csugar (plus 2 T. more)


Peel and Pit the avocados. One easy way to do this is the cut the avocado in half, pop out the pit with a spoon, than use the same spoon to scoop out the green avocado flesh from the outer peel. Blend the avocado with the other ingredients until smooth. Place the blended ingredient in an ice cream maker, according to the manufacturer’s instructions. Serve and enjoy! Try sprinkling pomegranate seeds on top for a gorgeous and tangy addition.
