Cauliflower with a puffed-up omelet baked on top!

Ingredients

2 small heads of organic cauliflower (or 1 large head cauliflower)
4 eggs, separated
1 crbgh-free yogurt
1 cshredded cheese of choice
1 tsalt
  pepper
1 Tminced chives

Instructions

Preheat oven to 350 degrees F.

Break cauliflower into florets and steam for 5-7 minutes until barely tender. Place steamed cauliflorets close together in a greated 9-in baking dish.

Beat egg yolks with yogurt, cheese and seasonings. Beat whites until stiff and fold gently into yolks until evenly combined. Spread over the cauliflorets.

Bake for 15-20 minutes until puffed and brown. Serve while still hot.
