Cilantro-Lime Rice

Description

This rice, with its fragrant hint of lime and cilantro, makes a fine side dish.

Ingredients

1 Tolive oil
1 cbasmati rice
1 1⁄2 cvegetable broth
3 clvgarlic (minced)
1 lime (zest and juice )
1⁄2 ccilantro (chopped)
1 tsalt

Instructions

Heat oil in a saucepan over medium heat. Add the garlic and rice. Increase the heat to medium-low and saute for 3-4 minutes, stirring frequently.
Add the broth, salt, and lime juice, and bring to a boil. As soon as the liquid boils, cover and reduce heat to low. Simmer for 15-20 minutes, or until the rice is tender.
Once the rice is done, fluff with a fork. Stir in the lime zest and cilantro. Serve immediately.
