This is delicious served on a spinach salad or on lightly wilted greens.
|1||mango (large, peeled, pitted, roughly chopped)|
|4 t||yogurt (plain)|
|3 T||rice wine vinegar|
|black pepper (to taste)|
Purée mango, yogurt and vinegar in a blender until smooth, 1-2 minutes. Stir in the salt and pepper. This will keep covered in the refrigerator for a few days, but is best the same day.
