Creole Roasted Sweet Potatoes

Description

A favorite from the Willy Street Co-op's deli case.

Ingredients

6 1⁄2 lbsweet potatoes (scrubbed, and cut into 1" strips)
2⁄3 colive oil
2 Tpaprika
2 Tcoriander
2 Tgarlic (minced)
2 Tsea salt
1⁄2 tcrushed chili flakes
1⁄2 tcayenne pepper

Instructions

Preheat oven to 350˚.
In a large bowl, mix together olive oil, paprika, coriander, garlic, salt, chili flakes, and cayenne pepper. Add the sweet potatoes and toss to coat with the oil and spices.
Spread the sweet potatoes in a single layer on a sheet pan. You may need more than one pan.
Cook for 35-40 minutes, or until lightly browned and tender, stirring after 20 minutes.
Serve hot or at room temperature.
