Description

A tasty spinach salad with cooling cucumber and succulent mango.

Ingredients

1 lbspinach (baby)
1 mango (peeled and cut into bite-sized pieces)
1 cucumber (large Mediterranean, peeled and sliced)
6 green onions (thinly sliced)
1⁄2 cchopped basil (thinly sliced)
1 lime (juiced)
1⁄2 cseasoned rice vinegar
  black pepper (to taste)

Instructions

Place the spinach in a large serving bowl.

In a medium bowl, combine the mango, cucumber, green onions, and basil. Add lime juice and vinegar and fold to coat. Arrange mango mixture over the spinach and sprinkle with black pepper.
