A tasty spinach salad with cooling cucumber and succulent mango.
|1 lb||spinach (baby)|
|1||mango (peeled and cut into bite-sized pieces)|
|1||cucumber (large Mediterranean, peeled and sliced)|
|6||green onions (thinly sliced)|
|1⁄2 c||chopped basil (thinly sliced)|
|1⁄2 c||seasoned rice vinegar|
|black pepper (to taste)|
Place the spinach in a large serving bowl.
In a medium bowl, combine the mango, cucumber, green onions, and basil. Add lime juice and vinegar and fold to coat. Arrange mango mixture over the spinach and sprinkle with black pepper.
