Curried Arkansas Black Apples

This recipe is intended to be paired with the other March 2011 $16 square recipe for Risotto with Lacinato Kale.


2 arkansas black apples (large)
1⁄2 white onion
2 Tolive oil
1⁄2 tcurry powder
1⁄2 cwater


Wash your apples to remove wax. Peel, slice, and core the apples. Notice how nice and dense the Arkansas Blacks are. Heat oil over medium heat and add onion to the hot pan. Stir. Add sliced apples and curry powder and cook for 2-4 minutes or until apple is warmed through. Add water and cover and cook for another 2-4 minutes. Serve atop risotto and kale.


Adjust cooking times to how firm you like your cooked apples. I like them to have some bite left to them so if you want them softer you will need to cook them longer.
