Garlicky Collards from Brazil

Description

This healthy, tasty side dish recipe comes from the Minas Gerais of Brazil. They go with almost anything!

Ingredients

2 lbcollard greens (cleaned thoroughly, stalks removed, and sliced into thin strips)
3 Tolive oil
2 Tbutter
1 onion (finely chopped)
3 clvgarlic (minced)
  salt (to taste)
  pepper (to taste)

Instructions

Bring a pot of salted water to a boil. Add the collard greens and cook for 5 minutes, until bright green. Remove from the hot water and set aside.

Heat olive oil and butter in a skillet over medium-high heat. Add the onion and garlic and cook until soft and translucent. Add the greens and sauté for 3-4 minutes. Season with salt and pepper, and enjoy!
