A tart and sweet twist on traditional chicken salad, and a great way to use leftover chicken.
|1 1⁄2 c||grapefruit (segments, cut into bite-size pieces)|
|2 c||chicken (cooked, diced)|
|1⁄4 c||celery (chopped)|
|1⁄4 c||yogurt (plain)|
|1⁄4 c||parsley (fresh, minced)|
Combine all ingredients and mix thoroughly. Serve on a bed of salad greens.
