Honeycrisp Greens with Earl Grey Tea Dressing

Description

Earl Grey tea steeped in vinegar is the surprise ingredient in this salad's dressing.

Ingredients

1 bnlettuce (green leaf)
1 red onion
1 apple (honeycrisp, large)
  feta (to taste)
1⁄3 cwhite wine vinegar
2 bags earl grey tea
2⁄3 colive oil
1 tDijon mustard
1⁄2 therbs de provence (dried)
1⁄2 tsugar
  sea salt (to taste)
  pepper (to taste)

Instructions

1. Bring vinegar to a boil. Remove and pour over tea bags in a small bowl. Cover and steep for 20 minutes. Discard bags.

2. Whisk together the vinegar-tea mixture with mustard, herbs, sugar, salt, and black pepper.

3. Very slowly drizzle in olive oil to emulsify.

4. Toss over salad ingredients. Serve and watch.
