Earl Grey tea steeped in vinegar is the surprise ingredient in this salad's dressing.
|1 bn||lettuce (green leaf)|
|1||apple (honeycrisp, large)|
|feta (to taste)|
|1⁄3 c||white wine vinegar|
|2||bags earl grey tea|
|2⁄3 c||olive oil|
|1 t||Dijon mustard|
|1⁄2 t||herbs de provence (dried)|
|sea salt (to taste)|
|pepper (to taste)|
1. Bring vinegar to a boil. Remove and pour over tea bags in a small bowl. Cover and steep for 20 minutes. Discard bags.
2. Whisk together the vinegar-tea mixture with mustard, herbs, sugar, salt, and black pepper.
3. Very slowly drizzle in olive oil to emulsify.
4. Toss over salad ingredients. Serve and watch.
