Jamaican Ginger Carrot Soup

Ingredients

1 tsalt
2 tlemon juice
1 onion (yellow, chopped)
5 cvegetable broth
1⁄2 ccashews (toasted, chopped)
2 tginger (fresh, grated)
1 tcumin (ground)
1 tblack pepper (or to taste)
1 crice milk (or dairy milk)
2 apples (chopped)
2 pears (chopped)
4 carrots (chopped)

Instructions

Simmer all ingredients except rice milk and lemon juice. When carrots are tender, puree the mixture; add rice milk and lemon juice. Heat through and serve. Note: For a chunkier soup, puree only half the soup and add it back to the remainder with the rice milk and lemon juice.
