Jicama and honeydew melon feature prominently in this fresh salad bringing fruit and vegetable together for a tangy treat.
|2 c||jicama (peeled and cut into thin slivers)|
|2 c||honeydew melon (cubed)|
|3 T||lime juice (fresh)|
|1 t||lime zest|
|3 T||mint (fresh, chopped)|
Toss all of the ingredients in a bowl. Cover and refrigerate for two hours. Garnish with a few sprigs of mint and enjoy!
