Some great advice from Simply Recipes: when planning recipes for kiwi, think of using them in the same way as you would a raw tomato (acidic and sweet.) Salsa is a fabulous option!
|4||kiwi (ripe, peeled and roughly chopped)|
|1||avocado (peeled and chopped into large pieces)|
|1⁄2 T||red onion (finely chopped)|
|1⁄4 c||pomegranate seeds|
|1 t||olive oil|
|1 T||jalepeno pepper (fresh or pickled, chopped, seeded)|
|1 1⁄2 T||cilantro (fresh, chopped)|
|salt (to taste)|
|pepper (to taste)|
Place the chopped kiwi, avocado, onion, and pomegranate seeds in a bowl. Drizzle in the olive oil. Gradually add the chopped pepper, tasting as you go, until you've reached your desired level of spice. Fold in the cilantro. Add salt and pepper to taste.
