Charming kumquats make for excellent salsa! Spoon over the usual quesadilla, munch with chips, or serve over a protein of your choice. Play with the ingredients- add whatever attracts your notice!
|2 c||kumquats (chopped and seeded)|
|1⁄2 c||red onion (finely chopped)|
|1⁄3 c||cilantro (chopped)|
|3 T||oil (olive or flaxseed recommended)|
|1⁄2 c||yellow bell pepper (chopped)|
|1⁄4 t||red pepper flakes (or chopped hot pepper)|
|lime juice (to taste)|
Combine chopped produce items with oil and lime juice- stir. Add red pepper flakes (or chopped pepper), cayenne and sea salt gradually, until you achieve a desired spice level.
