This dessert is light and refreshing, and is especially good after a spicy meal.
|ginger (fresh, 2" piece, thinly sliced)|
|1⁄3 c||mint (fresh, packed, plus more for garnish)|
|1||mango (peeled and thinly sliced)|
Combine the ginger, water and sugar in a saucepan. Bring to boil over medium heat. Simmer for 5 minutes, then remove from heat. Add the mint and stir to combine. Let sit for 5 minutes, then pour the contents of the saucepan through a fine mesh sieve into a bowl. Allow to cool.
When the syrup has cooled, add the mango to the bowl and stir to coat. Chill in the refrigerator for 30 minutes, then serve, garnished with mint leaves.
