Mango Salsa

Description

Such a good replacement for the usual tomato salsa! Eat with tortilla chips, on tacos, or with grilled fish or chicken.

Ingredients

2 plum tomatoes (seeded and diced)
1 1⁄2 cmango (peeled and diced)
1⁄2 conion (minced)
1⁄2 ccilantro (chopped)
3 Tlime juice (freshly squeezed)
1⁄2 tsalt
1⁄2 tpepper
2 clvgarlic (minced)
1 jalepeno pepper (stemmed and seeded, minced - optional)

Instructions

Place all ingredients in a bowl and gently fold together. Allow the flavors to combine at room temperature for at least 15 minutes and up to one hour. Taste and adjust the seasonings if necessary, and serve.
