Perfect for guests, or for a nutritional boost at home!
|6 c||mustard or collard greens (about 1 lb.)|
|2 T||balsamic vinegar|
|2 t||vegetable oil|
|1⁄2 c||pecans (roughly chopped or broken)|
Wash greens and dry thoroughly, then remove and discard stems. Tear into bite-sized pieces and place in desired serving bowl. In a small bowl, combine the vinegar, honey and mustard- set aside. Heat vegetable oil in a small skillet until hot, but NOT smoking. Add the vinegar mixture and pecans. Cook, stirring frequently, for 2-3 minutes. Pour over the greens and serve immediately.
