Mess o’ Greens Salad with Warm Pecan Dressing

Perfect for guests, or for a nutritional boost at home!


6 cmustard or collard greens (about 1 lb.)
2 Tbalsamic vinegar
2 thoney
1 TDijon
2 tvegetable oil
1⁄2 cpecans (roughly chopped or broken)


Wash greens and dry thoroughly, then remove and discard stems. Tear into bite-sized pieces and place in desired serving bowl. In a small bowl, combine the vinegar, honey and mustard- set aside. Heat vegetable oil in a small skillet until hot, but NOT smoking. Add the vinegar mixture and pecans. Cook, stirring frequently, for 2-3 minutes. Pour over the greens and serve immediately.
