Mozzarella, Arugula and Marinated Tomatoes on Focaccia

Description

A delicious salad that looks as good as it tastes.

Ingredients

3 large vine-ripened tomatoes ((about 1 1/2 lbs total) cut into 1/4 inch slices)
1 red onion (sliced thin)
3 Tred-wine vinegar
  freshly ground black pepper
4 carugula (chopped coarse)
1 quick focaccia (halved horizontally with a serrated knife)
1⁄2 lbfresh mozzarella (sliced thin)

Instructions

In a large bowl combine tomatoes, onion, vinegar and season with salt and pepper.
Marinate mixture and cover, tossing occasionally, for 30 minutes. Transfer onions and tomatoes to a plate with a slotted spoon. Add arugula to marinade. Toss with salt and pepper. Arrange arugula on one half of Focaccia bread, followed by tomatoes, onions, and mozzarella. Press together gently and cut into 4 pieces.
