Quick and Simple Kumquat Marmalade

If you've never tried your hand at making jam, this is a simple recipe to get you started, and is endlessly adaptable. You can add cinnamon, star anise, cloves, or cardamom. The marmalade will keep for two weeks in the refrigerator in an airtight container.


2 ckumquats (halved, seede, then chopped)
1⁄2 csugar
1⁄2 cwater
1 vanilla bean


Place the kumquats, sugar, and vanilla bean in a bowl and let sit for 15 minutes. Transfer to a non-reactive saucepan and add the water and bring to a boil over high heat. Reduce heat to medium-low and simmer for 15-20 minutes or until the liquid has reduced. Place in a glass bowl and let cool on the counter. When cool, refrigerate in a covered container.
