Closing Early

Both Willy Street Co-op locations will be closing at 7:30pm on Monday May 28 for Memorial Day. We will resume our regular hours on the following day.

Rhubarb Bread

Adapted from Harmony Valley Farm

Description

Sweet spring time bread with the zingy flavor of rhubarb and the sweetness of brown sugar.

Ingredients

2⁄3 coil
1 Tvanilla
1 tbaking soda
1 1⁄2 crhubarb (chopped)
1 Tbutter (room temp)
3⁄4 cbrown sugar
1 egg
1 tsalt
1⁄2 csugar
1 cbuttermilk
2 1⁄2 call-purpose flour

Instructions

Preheat oven to 325. Grease 2 loaf pans. Mix milk, brown sugar, oil, egg and vanilla in a medium bowl. In a small bowl, mix the flour, baking soda and salt. Combine the dry ingredients with the wet and mix. Add rhubarb and mix. Pour into pans. Blend sugar and butter and sprinkle on top of the batter. Bake for 50 minutes or until the knife inserted comes out clean. Allow to cool for 10 minutes before removing from pans.
