Sauced Sweet and Sour Carrots

Description

Carrots are another local produce item that can be found throughout most (if not all) of the long WI winter.

Ingredients

1 toil (of your choosing)
1 ttomato sauce
1 tsherry
1⁄2 tfresh ginger (grated)
1 carrot (finely sliced)
2 Tsweet pickle (chopped)
1 tvinegar
3 tbrown sugar
2 tcornstarch
1⁄2 ccold water

Instructions

Heat the oil in a saucepan and briefly fry the pickles and ginger. Mix cornstarch and water and combine with the rest of the ingredients, excepting the carrots. Add the mixture to the pickles/ginger and cook, stirring until the sauce thickens. Add the carrots, and heat to boiling. Serve hot.
