This light Mediterranean-style marinade is perfect for grilling chicken kabobs (see note).
|2 c||Sauvignon Blanc (about half a bottle)|
|1⁄2 c||olive oil|
|2 clv||garlic (minced)|
|2 T||basil (fresh, chopped)|
|1 t||oregano (dried)|
|2 t||lemon zest|
|1 T||lemon juice|
|1 T||black pepper|
In a mixing bowl, combine all ingredients.
This recipe will yield enough marinade for up to 5 lbs of chicken. Marinate by placing the chicken in a casserole dish and covering with the marinade. Marinate in the refrigerator for 4 hours, or up to 24 hours.
