A lovely way to get still more greens into one's diet!
|1 T||olive oil|
|1||white onion (thinly sliced)|
|3 clv||garlic (minced)|
|1 lb||saute mix (from Harmony Valley, or other assorted greens, washed and dried)|
|salt (to taste)|
|8||corn tortillas (warmed)|
|1⁄4 c||Mexican queso fresco (or feta, crumbled)|
Heat oil over medium heat and add the onion and garlic. Sauté until translucent, then add greens and a tablespoon or so of water. Cook, stirring occasionally, until greens are wilted. Sprinkle with salt to taste.
Make tacos with the greens and tortillas, topped with crumbled queso fresco and salsa.
