Tacos of Garlicky Greens

A lovely way to get still more greens into one's diet!


1 Tolive oil
1 white onion (thinly sliced)
3 clvgarlic (minced)
1 lbsaute mix (from Harmony Valley, or other assorted greens, washed and dried)
  salt (to taste)
8 corn tortillas (warmed)
1⁄4 cMexican queso fresco (or feta, crumbled)
3⁄4 csalsa


Heat oil over medium heat and add the onion and garlic. Sauté until translucent, then add greens and a tablespoon or so of water. Cook, stirring occasionally, until greens are wilted. Sprinkle with salt to taste. 

Make tacos with the greens and tortillas, topped with crumbled queso fresco and salsa.
