A simple and filling dish that highlights seasonal produce.
|8 4⁄5 oz||eden wild yam soba noodles (1 package)|
|2 T||eden toasted sesame oil|
|1⁄2 t||eden hot pepper sesame oil|
|3 clv||garlic (minced)|
|1⁄2 lb||button mushrooms (stems removed, quartered)|
Cook soba noodles per package directions, rinse, drain, and set aside.
Heat the oil in a large skillet and saute the garlic for one minute. Add the mushrooms and half the soy sauce. Saute for 3-4 minutes. Add the carrots, tofu, and soba noodles. Sprinkle on the remaining soy sauce, cover, and reduce the heat to medium-low. Cook for 5 minutes. Remove the cover and stir the noodles and vegetable to combine. Add more soy sauce, if desired. Turn the heat to medium. Add the snow peas and scallions; saute 1-2 minutes until the snow peas are crisp-tender.
