These yummy, sweet, tangy pickles take a little bit of work over the course of a week to prepare. They do not need to be processed in boiling water, but are shelf stable and will keep for 1 year.
2 1/2 lb cucumbers, 1 T kosher salt, 2 1/2 t alum, 4 c apple cider vinegar, 1 T pickling spice, 1 c sugar
1 clv garlic, crushed, 1 c fresh plain yogurt, 1 T olive oil, salt to taste, fresh parsley or mint, chopped - optional, 2 T butter, browned with sumac or paprika - optional
This stuffing is delicious: made with rich challah bread and loaded with sweet chestnuts, tart apples, and fresh herbs.
2 lb Challah bread, 2 c chestnuts, 4 oz unsalted butter, 5 celery ribs, 2 onions, 1/2 c flat-leaf parsley, 2 apples, 2 T thyme, 1 T chopped sage, 3 eggs, 3 c turkey stock, salt, pepper
This dressing is rich with herbs and loads of vegetables, and bakes up with a perfectly crispy crust.
1 lb crusty white bread, 4 T butter, 10 shallots, 1 fennel bulb, 1 celery root, 1 1/2 c walnuts, 2 apples, salt, pepper, 1/2 t coriander, 2 t chopped thyme, 2 t chopped sage, 1 c golden raisins, 3 c milk
