These yummy, sweet, tangy pickles take a little bit of work over the course of a week to prepare. They do not need to be processed in boiling water, but are shelf stable and will keep for 1 year. 
Ingredients: 2 1/2 lb cucumbers, 1 T kosher salt, 2 1/2 t alum, 4 c apple cider vinegar, 1 T pickling spice, 1 c sugar
Ingredients: 1 clv garlic, crushed, 1 c fresh plain yogurt, 1 T olive oil, salt to taste, fresh parsley or mint, chopped - optional, 2 T butter, browned with sumac or paprika - optional
This stuffing is delicious: made with rich challah bread and loaded with sweet chestnuts, tart apples, and fresh herbs.
