    • soba noodles, cooked
    • 1
    • small onion, diced
    • 2 clv
    • garlic, minced
    • 1
    • each red and green bell pepper, chopped
    • 3 c
    • broccoli or cauliflower, chopped and steamed
    • 1 c
    • frozen peas
    • 1 T
    • olive oil
    • 1 t
    • turmeric
    • 1 t
    • brown mustard seed
    • 1⁄2 t
    • whole cumin seeds
    • 1 t
    • arrowroot
    • 1⁄2 c
    • cilantro, chopped
    • 1⁄4 c
    • water
    •  
    • tamari to taste
    •  
    • limejuice to taste

Description

A warm, satisfying noodle dish.

Instructions

Sauté onions in olive oil until translucent. Add garlic, broccoli and peppers and cook until slightly softened. Add water, turmeric, mustard, cumin, and arrowroot. Bring to a boil, stirring frequently. When mixture thickens, remove from heat. Pour over noodles and mix well. Add cilantro and peas. Adjust for salt and acid with tamari (start with 1 tablespoon) and limejuice (start with ½-tablespoon).
