Fire Roasted Tomato Chili

    • tomato juice (15oz)
    • 2 T
    • garlic (minced)
    • 3 T
    • chili powder
    • 1⁄2 c
    • green pepper (diced)
    • 1 c
    • onions (chopped)
    • 1⁄4 c
    • roasted tomato salsa
    • 1 cn
    • diced tomatoes (15oz, undrained)
    • 2 cn
    • chili beans (15 oz)
    • 1 cn
    • kidney beans (15oz, undrained)

Instructions

In a large saucepan, heat 2 tablespoons of vegetable oil and saute the onions and green peppers for 5 minutes. Add the garlic and chili powder and saute 2 minutes more. Add the juice, tomatoes, chili and kidney beans. Bring to a boil, then simmer 30 minutes, stirring often. Add salsa and simmer 10 minutes more.

Notes

For thicker chili, make one day in advance and refrigerate until needed.
