1 c long grain brown rice, 2 c water, 3 T cider vinaigrette (for use in our Dirty Cajun Rice), 1 T safflower oil, 1 c yellow onion, diced, 1/2 c celery, diced, 1/2 c green bell pepper, diced, 2 clv garlic (minced), 2 T jalapeno, minced, 2 scallions, chopped, 2 T blanched slivered almonds, toasted, 2 T pecan halves, toasted, 1 t ground cumin, 1 t dried oregano, 1 pn cayenne pepper, salt and pepper to taste
