- 4 Vidalia onions
- 1/2 c olive oil
- 4 oz Gorgonzola
- 2 T sherry vinegar
- 1/2 c sliced almonds
- 1/3 c chopped fresh chives
Roasted Vidalia Onions with Blue Cheese Directions
- Preheat oven to 400F.
- Arrange the onions on a rimmed baking sheet in one layer. Drizzle with 1/4 cup of the olive oil and flip the onions over to coat. Season with salt. Roast about 1 hour, until tender and the edges are golden-brown, flipping them every 15 minutes. Transfer to a serving platter and season with salt and pepper. Allow to cool, then top with the Gorgonzola. Drizzle with the remaining 1/4 cup of olive oil, and then the vinegar. Top with the almonds and chives, and serve.
