Rustic French Beets

Possibly the most delicious way you’ve eaten beets, this recipe uses the greens in addition to the roots. They’re served with creamy Boucheron cheese and warm, crusty bread.

  • 6 beets
  • 1 bn Swiss chard
  • 3 T butter
  • 1 shallot
  • salt
  • pepper
  • 2 T white wine
  • 2 T water
  • 1/2 lb Boucheron cheese
  • crusty peasant-style bread

Rustic French Beets Directions

  1. Slice the peeled beets into ¼-inch rounds. Place the greens in a large bowl. Coarsely chop the chard leaves and add to the bowl of beet greens. Set aside.

  3. Heat a large sauté pan over medium-high heat. Melt the butter, then add the shallot and sauté until golden and tender. Add the sliced beets to the sauté pan and sprinkle with salt and black pepper. Reduce the heat to medium-low, and sauté for 15 minutes. When beets start to become tender and glazed, add the beet greens and chard. Sauté for 5 minutes, then add the wine and cover. Cook until the greens are wilted, add a spoonful or two of water if needed. Cook until liquid has been absorbed and adjust the seasoning as needed.

  5. Transfer to a shallow serving bowl, and serve with large chunks of Boucheron and warm bread. Sprinkle with black pepper before enjoying.
