Simple Gluten-Free Pie Dough

This lightly sweet, shortbread-style crust truly is easy - you don't even have to roll it out, just press it in the pan.

  • 1 c brown rice flour
  • 1/4 c cornstarch
  • 2 T confectioners' sugar
  • 1/2 t baking powder
  • 1/2 t baking soda
  • 1/4 t cream of tartar
  • 1/4 t salt
  • 7 T unsalted butter
  • 1 egg

Simple Gluten-Free Pie Dough Directions

  1. Combine the rice flour, cornstarch, confectioners' sugar, baking powder, baking soda, cream of tartar, salt, and butter in the bowl of a food processor. Pulse until pea-sozed crumbles form. Add the egg, and pulse until the dough comes together. Form the dough into a ball and transfer to a pie plate. With your fingertips, press the dough evenly into the pie plate. Crimp the edges with your fingertips or a fork. Place in the refrigerator and chill for 30 minutes.
  2. Preheat the oven to 400˚F. Bake the crust until the edges begin to color and the crust is lightly set, about 10-12 minutes. Lower the heat to 350˚F. Remove the crust and add the filling and finish cooking. Or continue to bake the crust until it's golden brown, about 15 more minutes, then cool completely and fill as desired.
