Made with chickpea flour, socca is a large, gluten-free and vegan pancake. This one is made with Indian spices and sauteed onion and tomato.

- 1 c chickpea flour
- 1 T flaxseed meal
- 1/2 t salt
- 1/4 t turmeric
- 1/4 t garlic powder
- 1/4 t baking soda
- 1/4 t ground cumin
- 1 c water
- 4 T olive oil
- 1 onion
- 1 tomato
- 2 T chopped cilantro
Socca with Tomato and Onion Directions
- In a large bowl, mix together the chickpea flour, flaxseed meal, salt, turmeric, garlic powder, baking soda, and cumin. Slowly whisk in the water until there are no lumps. Stir in 2 tablespoons of olive oil. Set aside.
- Preheat oven to 450℉.
- Heat last 2 tablespoons of oil in a heavy skillet over medium heat. Saute the onion for 6-8 minutes, until golden brown. Pour the chickpea batter into the pan, and arrange the tomato slices on top. Sprinkle with cilantro. Bake 10-15 minutes, until the edges are set and the center is firm.
- Slice and serve hot.
