Socca with Tomato and Onion

Made with chickpea flour, socca is a large, gluten-free and vegan pancake. This one is made with Indian spices and sauteed onion and tomato.

  • 1 c chickpea flour
  • 1 T flaxseed meal
  • 1/2 t salt
  • 1/4 t turmeric
  • 1/4 t garlic powder
  • 1/4 t baking soda
  • 1/4 t ground cumin
  • 1 c water
  • 4 T olive oil
  • 1 onion
  • 1 tomato
  • 2 T chopped cilantro

Socca with Tomato and Onion Directions

  1. In a large bowl, mix together the chickpea flour, flaxseed meal, salt, turmeric, garlic powder, baking soda, and cumin. Slowly whisk in the water until there are no lumps. Stir in 2 tablespoons of olive oil. Set aside.
  2. Preheat oven to 450℉. 
  3. Heat last 2 tablespoons of oil in a heavy skillet over medium heat. Saute the onion for 6-8 minutes, until golden brown. Pour the chickpea batter into the pan, and arrange the tomato slices on top. Sprinkle with cilantro. Bake 10-15 minutes, until the edges are set and the center is firm.
  4. Slice and serve hot.
